    Molten Spiced Cabernet Chocolate Cake
    I tried this for the first time tonight; don't remember where I found the recipe. I think I baked it just slightly too long, but the flavor is great!


    4 oz semi sweet baking choc
    1/2 c butter
    1T Cabernet Sauvignon
    1t vanilla
    1c confectioners sugar
    2eggs 1egg yolk
    6T flour
    1/4 t cinnamon
    1/4 t ground Ginger

    Butter 4 6oz custard cups
    Melt choc
    Melt butter
    Whisk together
    Add wine, vanilla, sugar
    Add eggs and yolk
    Add remaining ingredients
    Bake 425F 15 min; sides should be firm and centers soft

    Pasta and Vegetables in Garlic Sauce
    This is based on a JT's recipe. (JT's Cuisine in Iowa is a fabulous place, for the uninitiated.)


    Pasta and Vegetables in Garlic Sauce
    1 9-oz. package refrigerated fettuccine
    2 carrots, cut into thin ribbons
    2 zucchini, cut into thin ribbons
    1 red bell pepper, sliced very thinly (this is an addition of mine)
    1/4 C butter
    1 medium onion, chopped/sliced into thin ribbons
    2 cloves garlic, minced
    1/2 C chicken broth
    1/2 C heavy cream
    1/2 C grated Romano cheese

    Use a vegetable peeler to slice the zucchini and carrots into thin ribbons; use just the green and some white of the zucchini, not the seedy inside. Cook fettuccine in a large pot of boiling water with zucchini and carrot ribbons. Drain and keep warm. Add pepper slices (this keeps the peppers crisp; they don't need to be cooked.) Melt butter and add onion and garlic; cook until onion is translucent but not browned. (I browned the onion and garlic and it all tasted fine.) Add broth and cream and cook until slightly thickened. Toss with pasta and vegetables. Serve with grated cheese and ground black pepper.

    Mushroom Pie
    Lately I have found myself perusing my local library more and more often. I also have found myself solely interested in the cook books as of late. I found this little gem of a recipe. It had peaked my interest when I was reading the book and I tried it. The pie was amazing, so I though I need to write about this one. This is unlike any savoury pie I had tried and I am glad I did!

    Chocolate Mousse
    This is a recipe of my dad's; I don't remember which cookbook he got it from because he's been making it ~40 years. :) I thought it was the best thing EVER when he'd make it when I was a kid, and then I thought it looked really complicated. After I got a better mixer, though, making this became a snap. (I still think it's one of the best things EVER. LOL!)

    I told gingerzing1967 I'd post this; decided to do it here in case anyone else thinks it looks interesting!

    Chocolate Mousse
    2 1-oz squares unsweetened chocolate
    8 T butter, softened
    1/2 C confectioner's sugar
    6 T white granulated sugar
    2 eggs
    1 C heavy cream and 1/4 C white granulated sugar

    Melt chocolate in top of double boiler; cool slightly.
    Add chocolate to butter; beat until light and fluffy.
    Add sugars; beat until smooth.
    Add eggs one at a time and beat 2-3 minutes after each.
    Beat mousse until not grainy.
    Spoon into individual serving cups and refrigerate at least two hours.
    Top with homemade whipped cream: whip cream and sugar in cold bowl until stiff peaks form.

    Salmon in soy'n'honey sauce

    Hi everyone!

    Here is a very simple and amazingly tasty LOW-CAL recipe for you)

    For two portions:




                                     2 salmon fillets

                                     3 Tbsps of LIGHT soy sauce

                                     1 Tbsp of Acacia honey

                                     fresh thyme

                                     ground black pepper

                                     olive oil

    1. Heat oven to 180°/365°F. Wash salmon fillets. Mix soy sauce with honey.





    2. Place salmon into a pan, pour on soy-honey sauce. Sprinkle it with pepper and fresh thyme.





    3. Put the salmon into the oven for 17-20 minutes.
